Here at Westfield Farms we are always looking to create innovative and nutritious produce that captures the essence of the terroir and climate that surrounds us.

Always up for a challenge we looked to reintroduce the Ancient Grain Spelt which although it was grown in Northern Europe 9000 years ago, fell out of favour in the 1900’s when higher yielding, easier threshed modern Wheats were developed. Spelt (Triticum spelta) is actually one of the genetic precursors to modern Wheat (Triticum aestivum) and has significant health and nutritional advantages over modern wheat.
Before we could get to a bag of Westfield Farms Stoneground Spelt Flour we had the slight problem of finding Spelt seed to sow in the field. Being pioneers and the first in Scotland to grow Spelt, no seed could be found in Scotland, or indeed in the whole of the U.K. Established seed merchants drew a blank, to a man asking ‘Spelt? What’s that? Never heard of it’ and so the net was cast wider to mainland Europe. After a long and difficult search we eventually found enough genuine Spelt seed to sow in the Autumn of 2015.
Spelt is particularly hardy and came through the Winter looking good going into the main growing season. The tough outer hull that grows around the Spelt grain did its job very well, protecting the grain from attack by all manner of beasties, but did have the unfortunate consequence that the harvested grain would be impossible to mill without somehow removing the hull. Never one to give up easily and reckoning that there are no real problems, only solutions waiting to be found, John designed and built from scratch a dehulling machine in the farm workshop to do just that, giving us not only the sole crop of Spelt in Scotland but the only dehulling machine as well.
After dehulling the Spelt we then take the grain to Michael at The Golspie Mill www.golspiemill.co.uk, the only remaining commercial water powered mill in mainland Scotland. Built in 1863 the mill retains all the original methods and mechanisms, using solid granite mill wheels to ensure that none of the goodness and nutrition is lost when the Spelt is ground to create our hand crafted Westfield Farms Stoneground Spelt Flour.
